You can add toast if you can afford the extra bread. Adding eggs does not increase your budget a lot and they can go very far. This is definitely a way I would add variety. To beef up the protein content in this, I use vanilla greek yogurt that I buy by the tub. This lasts a long time. Lastly, a box of pancake mix and smash bananas up in your pancakes.
